Simple Bruschetta & Mozzarella Croissants with Prosecco

This simple meal is perfect with Prosecco! Fresh tomatoes are usually higher in acidity and need a wine to match. This prosecco is perfect to accompany the tomatoes and mozzarella in the salad as well as the Croissant. Sparkling wine tends not to overwhelm because of its delicate suppleness and bubbles.

Bruschetta

1 teaspoon minced garlic

3 tablespoons of Extra Virgin Olive Oil

2 tablespoons of mozzarella (optional)

1-2 cups of Cherry Tomatoes chopped

1 tablespoon of Basil

2 tablespoons of balsamic vinegar salt & pepper to taste

In a medium mixing bowl, add the tomatoes, garlic, basil, vinegar, olive oil, cheese, salt and pepper. Mix thoroughly and let sit for at least 15 minutes at room temperature to let the flavors marinate.

Mozzarella Croissant

Roll out croissant on baking sheet. Slice cheese in thin slices and place on thicker side of the roll. sprinkle Italian spices over cheese and roll up the croissant. Next, top with melted butter.  Bake as instructed.
