Salad for your wine?

When it comes to pairing wine with a salad, it is not always easy.
Different types of lettuce can strengthen bitterness in wine. Other components like fruits, vegetables, protein, cheese, can demand texture. However, one of the most dominant factors in a salad is the dressing.  Here you want to make sure that the acid in the wine accommodates the acidity in the salad dressing.

A salad prepared with protein and a strong cheese would go well with a full-bodied white wine-Chardonnay, Viognier, Semillon or red wine with low tannin- Gamay, Beaujolais, Rose (off-dry), Pinot Noir

Salad with sweetness or spice pairs well with Chenin Blanc, Gewurztraminer, Rose (sweet), Riesling, Muscat, White Zinfandel
Dairy-based dressing works well with medium to full-bodied oak-aged white wine such as Fume Blanc, Viognier, Chardonnay
Vinaigrette-based dressings work well rose, sparkling wine, Sauvignon Blanc, Pinot Gris, unoaked Chardonnay (cool climate white)
Seafood salad goes well with Sparkling wine, Riesling (off-dry)
Egg salad pairs well with a Riesling (off-dry)

When in doubt… I always go for a fabulous sparkling wine!
