Cabernet Sauvignon

Cabernet Sauvignon is one of the most popular and very beloved red wines of the world. This grape brought great fame to California. California’s Cabernet won the top place over French wines in the famous “Pairs Wine Tasting” in 1976. Cabernet Sauvignon is one of the main grapes in the Bordeaux Blend.  Originally from France and has spread to many wine making regions. This wine is big and sturdy. Cabernet has lot’s of body, flavor, tannins, and some bitterness.



Cabernet Sauvignon is often blended with other reds such as Merlot, Cabernet Franc, Shiraz and other red wine in the Bordeaux Blend. The blending helps lower the tannin to balance flavors. Cabernets are aged in oak for at least 1-2 years.

Cabernet works well with:
  • red meats such as lamb, veal shank, steak
  • grilled foods because the grilling adds bitter components
  • bitter foods like mustard greens, eggplant, endive, bitter pair well with the tannins
  • thicker dishes such as rich stews or longer cooked meats
  • dark chocolate
